A new menu infused with exotic flavours of the orient and a passion for cutting edge cuisine with a strong Pacific rim twist is what new Executive Chef Cheyne Morrisby is serving up this winter at the Franschhoek Kitchen at Holden Manz Wine Estate.
Chef Cheyne, who has cooked at the finest international kitchens for celebrities such as Kate Moss and Kylie Minogue, has created an exceptional winter menu of flavourful dishes fuelled by his knowledge of world food trends.
Paired perfectly with signature wines from Holden Manz, Cheyne’s winter dishes offer you a multitude of choices for a memorable feast with an international flavour. Start your culinary journey with pea and mint soup, enjoyed hot or cold, or tuck into Keralan spiced squid, served with green chilli puree, miso mayo and lotus root crisps.
For your main course, indulge in Cheyne’s signature duck breast, best enjoyed with the silky taste of Holden Manz Merlot 2010, savour pork belly with the signature Bordeaux-style blend, Big G 2009, or try a succulent grilled sirloin, served with spring onion and ginger puree, red kimchi and crisp anchovy butter dauphinoise – a winning combination with the sweet, dark, cherry fruit flavours of the Holden Manz Shiraz 2008.
The indulgent desserts include a decadent 70% cocoa bean Belgian chocolate mousse with salted caramel, or try the heavenly dessert trio of cereal milk with miso butterscotch, white chocolate and sesame cheesecake, and warm pear, cinnamon and ginger compote.
